This bug happened to both of my crafts, whenever I start my flight, the jet just suddenly speed up to 1000 m/s+. To solve this I tried to add some more weight such as adding more missiles of fuel tanks, it improved a little bit but after I used all my missiles it happened again (I had to adjust the weight from ~9000kg to ~28000kg). It was really annoying so I hope you can fix it, thank you very much.

Your use of the tinker panel part scale is causing physics to break. As stated in the tinker panel: "These are extra advanced settings and are not fully supported [...] Use at your own risk!".
I'd recommend trying to use part and mass scaling as little as possible, specially on wings.
