The engines are a bit underpowered and
Shape of fuel tanks need to be spherical or cylinders with spherical domes
The fuel tanks has less fuel
Compared to real world components.

there is a "utilization" setting somewhere in a fuel tank's xml, however i haven't found it myself
essentially it control how much of the tank's volume is actually used for fuel, in a scale from 0 to 1 (0% to 100%)
