this change has happened to me other times, I do not know how to explain it but I am going to describe it, if you remove the decorations of the wing, the control will be reduced, if you remove the motor decorations, it will do something different , this is annoying (the decorations have weight and drag to the minimum)

Have you tried to disable drag and not only lower it? Also try to set part collisions to never, they may be interacting between them, changing the performance
