I don’t have the beta but I’ve also noticed this before (I’m on iOS). Not every photo, but when I take a bunch I’d say it crashes like 10% ish of the time. The photos when it crashes get saved to the SimpleRockets 2 files folder, but not the photos folder so you can’t view them in the game/photo album, but they do still exist.
