Rocket still flies and produces thrust, but the fuel gauge does not show remaining fuel. It's stuck at 0%. Staging, separation, etc. works fine, I just can't tell how much fuel I've got

@AndrewGarrison I used spacebar to activate them. More specifically, I bound the staging key to F. So I activated them with F, if that makes any difference.

Did you activate the engines with spacebar or did you click on the engine and click the Active checkbox to activate them or did you activate them with an activation group?

I just saw another bug report of this same issue, and it finally clicked what is going on here. Copy/paste from my response on that post:
I think what's happening here is the engine is actually detached and is pushing against the final stages, making it appear they are all still connected. Since the engine is detached, the command pod/chip is reporting 0% fuel, but the engines are still firing because they still have access to the the fuel tank they detached with.
