I submitted a bug report about this yesterday and I saw it being posted afterwards on the bugs section, but when I look today I can't find the whole post. Now that I read this thread I think it explains the bug I tried to report. I also used long wings that started before the CoM but the control surfaces are quite a bit behind it.

The cause might be explained but I think this is something we could consider a bug. It would be nice to see a fix for this, meaning that the point at which the control surface applies it's force to the craft should be somewhere around in the middle of the control surface.

I made some delta wings before and can't recall having that issue, of course canard wings makes it more responsive but not a must (Mirage-2000 doesn't have ones and it used to be among the best fighter jets) .
What's the controls being used? Pitch or sliders? I'm not much familiar with the phone version . Also gyroscope on planes can cause a number of issues and can be worse with certain auto-pilot sittings (we do fly by auto-pilot , I think it better be called Fly By Wire instead)

This is an issue that can happen when the wings are very long and the force of the wings are actually being applied at a position in front of the CoM of the craft. If you break your wings up and create a separate wing section with the control surface that is completely behind the CoM of the craft then it will work properly.
