To reproduce, just create a new planet using the terrestrial planet template, increase the diameter to over 2,600,000 meters and launch something on the surface, it makes this template nearly unusable if you are increasing the radius, I think it has to do with the scaled space cubemap not properly updating with the radius of the planet so when at the surface, it is still the scaled space and not the actual terrain quads link to bug report

I wouldn't recommend messing with the files in the installation folder. That is likely to cause you trouble. If you save a planet after creating it with the template, the planet should be stored here: %USERPROFILE%\AppData\LocalLow\Jundroo\SimpleRockets 2\UserData\CelestialDatabase\CelestialBodies\
You are not going to be able to fix the template, just the planets created from the template. The template itself though should be fixed in the next beta update.

@NathanMikeska how do you find the planets.xml file, I found the template planet files in the streamingassets, but changing those files did nothing, I was even able to delete those files and nothing happened

Try this...
Open up the planet XML, remove the "legacyQuadSphereActivationDistance" and "legacyQuadSphereTransitionDistance" attributes, then save the XML.This should be fixed in the next update. Let me know if that doesn't solve the problem though. Sorry about that.
