As the title says, what does it do and how can I modify it? Also like example, what does the code '0,0,5,5,0' even mean?

it means the number of colors that the part currently is using, for example 0 is the absolute first color on the top left, 1 is the secondary color (e.g. the iconic blue in the default color scheme), etc. the materials property shows what colors are currently being used, meaning that the 1st, 2nd, and 5th ones use the 0 paint, while 3rd and 4th use the 5 paint
