Learning a bit about tuning the PID values can greatly improve the handling/controllability of your rockets. Sometimes small changes can make large differences. ;)

Well, it honestly depends on your objective. If your trying to send low payload objects to orbit, I suggest a simple, easily maneuverable design, usually two stage with a single main engine each. I personally like to use gnome engines as very fine maneuvering thrusters.
If your going for a manned approach, I would suggest lengthening the stater craft, adding an interstate between the capsule and first stage, and also a heat shield under the capsule to protect the capsule during re-entry.
Anyways, if you need more tips or help, just ask the nice community here.
