RCS and Degrees

Well, I’m trying to dock two crafts in my orbit. I’m having some success with degrees, but I don’t understand yet how I can change to the same degree if my orbit is changing too. Just seeing the lines inclination and burning in 90° or 270°? (My prograde is 0°)
When I’m on orbit and start my RCS with control and translate, the RCS is starting and don’t stop until the fuel stoped too. My spaceship is spinning in random direction. How I can stop this and control better my crafts? Thx
