@Insanity I see Scott Manley but i don't like too much everyday astronaut, he doesn't talk much about science, he is more for politics (in my opinion)

@Dala1 if you really want to learn a lot about rocketry i recommend youtube videos from scott manley or everyday astronaut talking about rocket science as they are very informative and mostly easy to understand even for people with not as much background knowledge.
For the game i guess just try playing around with fuel tanks and engines figuring the stuff out for yourself.

In simpleplanes you can go to 500000 ft and still be in the atmosphere
