So when I previously sent a rocket to luna, a dot came up I pressed it and it was the delta v thingy, I've seen it before and I don't know how to use it and also, why is this not in the tutorial?

I presume you are talking about "Burn Nodes." These are similar to "Maneuver Nodes" in Kerbal Space Program. Unfortunately the built in tutorials only cover the basics. However, you can check out this player produced tutorial, or this brief description from the blog, for more information.
