Your control surfaces were far too close to the CoM, meaning that they did not have the leverage to produce the manoeuvrability you wanted. I added canards to the nose, and tried my best to make them fit in with your design, and now your plane has realistic manoeuvrability, topping at about 14G@250m/s. If you want more manoeuvrability, the canards are powered by rotators, and you can set them up to 45 degrees of deflection. These rotators do not consume power.
I also edited your engines' inputs, so that it is easier to control at low speeds. Up to 70% is good for low/medium speed flight, and everything above for supersonic/hypersonic. You can change this back if you don't like it by changing the engine input back to Throttle.

@CroissantStudios I found the issue. I didn't touch yaw, for the rudder's primary purpose is to stabilise the plane during manoeuvre, not turn it. I left it unlisted so that you can tweak it and upload it under your own name. It is your plane, after all.
