It looks good, it flies well too but I can’t really see a difference in performance between the different modes

The biggest difference to me seems to be when pulling up hard vs pushing the nose down hard at high speeds. The inverted gull mode, (slider 1 to 100%) is best for pitching up and or banking hard at high speeds
Normal gull mode (slider 1 to -100%) makes it easier to lose altitude while maintaining speed. it also raises your wings up away from the ground to assist with landing.
Try changing modes during a high speed banking maneuver, or right before touchdown over the runway, that's when I see the biggest difference honestly. I agree it is very subtle but as far as stability goes, it does make a significant difference.
