I agree with SelectAKey : the pilot orientation is wrong : the head doesn't "point the blue arrow", it is rotated 90°.
I don't understand Silentime advice, although it can be right.For my test : I put the pilot in the right orientation, gave all the vernier their full glimbal range, and all went good.

The Rockets are OK. You need to recreate the payload. First, you need to replace the control chip. Secondly, replace all RCS. You need to pass the load test before assembling the rocket.
