One more thing I forgot, I noticed that between the two stages on the main rocket, tro making it a bit more smoother to prevent drag. Think about it, if there's drag higher than the center of thrust/mass then if the rocket tilts just a tiny bit, it'll be bad news

Hi there, love the rocket. How about giving it a few fins and also prevent the rocket engines from colliding with other parts otherwise it won't make use of the gimbal. Try spacing them out a little more or decrease the size of the booster engines. Those few things will help your rocket stick to the desired trajectory

Not sure if you're still having issues... does your rocket have it's own command chip separate from the rover? The rover's command disc is designed to drive a car, not fly a rocket, so if it's trying to control the rocket, it will do all sorts of weird things.
