This is pretty cool!
you're right... a view from the ground is the best way watch your rocket launch. you can add cameras to give that view. This your rocket with two cameras added:

One is at the top of the tower, and the other is on the ground away from your rocket. Both are set to "look at the command pod" in camera settings. It really makes it look like an RC rocket launching.

I put that ground camera down in a random position, and it was in the perfect spot for a nice photo.
