I think that you guys did a good enough job already, there are many engines irl that have quite similar in characteristics. this one seems to be particularily similar to Merlin-1D, only a little bit more powerful and efficient.

I know, the engine and tank masses in KSP are way too high, but ISPs are roughly similar to real life. If SR2 takes ISP ratings to this level too I fell like those two games will be similar in terms of difficulty.

I think it's quite reasonable. SR2 already has higher deltaV requirements than KSP, which is considered quite hard for many beginners, so low engine masses and higher ISPs will only improve the game balance and not only the game balance but also the realism if engine characteristics are somewhat realistic in the vanilla you won't need as many performance tax-ing mods to play a Realism Overhaul style playthrough.
I feel like the exhaust should be more streamlined or "straight" at sea level. Also I think that in the vacuum it shouldn't have those hard edges and transition more smoothly into transparency.

I think that color should depend mostly on exhaust temperature, I'm not sure about that though.
